The angle and cropping of the first two photos make them very difficult to critique. If I were to see these entries in person, I'd probably offer more/different feedback. That said....
1. This is a SUPER cute entry, but it's a little bit messy. That long strap (I'm guessing it's the halter crownpiece) needs to be trimmed. It's very long and distracting. Also, if you're going to use a lead shank with a chain, the chain should be run under the pony's chin and snapped to the offside throatlatch ring. The handler should have her hand on the shank right up next to the halter. She can't even get close with the chain set up this way. Less important but still worth noting--the doll is dressed up fancy but the pony and halter are decidedly casual. I prefer to see all fancy or all casual. This is a minor point, but it entries do look a lot more polished when all the parts match.
2. I suspect this model is cantering. If so, its head is bent opposite to the direction of travel. This is never correct and makes the model a poor choice for performance showing. If I'm wrong about the gait (and I could be since most of the horse's legs are cropped out!), please disregard this comment entirely! :)
3. This entry is fine and contains no major errors. It would probably place higher with better documentation. This post would be a great place to start!
1. Love the pony! So stinkin cute! I thought the pink was part of the lead and I just didn't know what part of the showmanship it was. I do think the halter could be a little straighter, but maybe snipping that strap would solve that.
2. Wow...that saddle...just wow. I thought the horse might be focusing on an obstacle or on something the rider was doing. The only question I have: is the second girth supposed to be so close? Is that something the judges would deduct for?
3. This is just gorgeous.
Probably not a whole lot of help as I don't really know a whole heck of a lot yet (but I printed everything at Braymere and MEPSA out so I can study!) so all I can do is ask questions about the little things. Please let me know if you would rather I not eat up comment space. I won't be offended. :-)
1) Pony Showmanship - very cute idea. The halter needs to fit the pony better. Adding a competitor number to the back of the handler would add bonus points.
2) Western Sidesaddle - Very nice saddle . The ends of the reins need to fall on the left hand side of the horse (if the rider is right handed). The cheek piece of the bridle needs to be tightened up. I can see between it and the horse's cheek. I also agree with Jennifer's comment about the horse's lead. He is cantering on the right lead but looking left. A very bad fault.
3) Western Trail - You need to have some documentation with this one. Currently in the AQHA and APHA (need to check ApHA) dismounting during a trail course is not allowed. The tack need to be fitted to the model better. The rear cinch looks to be too tight. The breast collar strap between the front legs looks too loose. The ear piece is too small. If possible, brush out the tail so that it isn't so scraggly.

Lasair, it's fine to comment as long as other viewers know your experience level, and you told them :) Comment space is free :) Thanks!
